Ingredients
1 cup unsalted butter (room temp)
1 cup powdered sugar (after sifted)
1 egg
1 tablespoon almond or vanilla extract (or your favorite flavor)
3 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
Color food gel paste in your favorite colors
Instructions
How to make no spread sugar cookies
Step 1. Cream butter and sugar with a paddle attachment until fluffy and white. This takes about 5 minutes on medium high. Turn off the mixer, every so often, and scrap down the sides of the mixing bowl.
Step 2. Add the egg and extract at a low mixing speed and mix for about 20 seconds to help with emulsion. You can use any extract flavor - I love vanilla, lemon or almond but every once in a while I miss that nostalgic birthday cake taste and I'll use clear vanilla extract.
Step 3. Add sifted dry ingredients and scrape the bowl in-between. When the dough turns into a ball on the paddle and the mixer struggles a little, you’ll know it’s ready.
Step 4. Roll your dough into a flat disk, wrap and place in the refrigerator to chill for at least half an hour. You'll want to work towards 1/4 inch thick.
Step 5. Use a cutter or hand cut into desired shape and place on a baking sheet 1/2" to an inch apart. This is not because they spread but to give them room to bake evenly around the edges. Cover these and refrigerate for at least 1/2 an hour to overnight. This is the big tip to no spread cookies!
Tip: wrap so they don't dry
Step 6. Bake for 7-10 minutes in a preheat 350-degree Fahrenheit oven. This varies by oven - you can check to see if the top of the cookie is no longer dark and glossy.
Baked sugar cookie success!
